Spicy Indonesian Sambal Eggs with Crispy Potatoes

Sambal Telur Kentang (Balado) Recipe

Ingredients:

  • 4 boiled eggs
  • 2 potatoes, cut into sticks
  • 1/2 ounce dried anchovies
  • 4 stalks of scallions, cut into pieces
  • To taste: chicken stock powder or salt
  • Juice of 1 lime

For the Spice Paste:

  • 1 ounce red chilies
  • 1 tomato
  • 2 cloves garlic
  • 15 shallots

Instructions:

  1. Prepare Ingredients:

    • Heat oil in a pan and fry the dried anchovies until crispy. Remove and set aside.
    • In the same oil, fry the potato sticks until golden and crispy. Drain and set aside.
    • Fry the boiled eggs until slightly crispy on the outside. Set aside.
  2. Make the Spice Paste:

    • Blend or grind the red chilies, tomato, garlic, and shallots into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a generous amount of oil in a pan. Add the spice paste and sauté until fragrant and the oil begins to separate from the paste.
    • Season with chicken stock powder or salt to taste. Adjust seasoning as needed.
  4. Combine and Cook:

    • Add the cut scallions to the pan and stir-fry for a minute.
    • Add the fried potatoes, eggs, and dried anchovies to the pan. Mix well to coat everything with the spice paste.
    • Cook for a few more minutes to allow the flavors to meld.
  5. Finish and Serve:

    • Squeeze lime juice over the dish and give it a final mix.
    • Serve hot and enjoy this flavorful and spicy dish!
