Title: Simple Stir-Fried Chicken

Ingredients:

  • 1/2 kg (about 1 lb) chicken, cut into pieces
  • 5 cloves garlic, sliced
  • 1 large onion, sliced
  • Green bird’s eye chilies, to taste
  • Salt, to taste
  • Sugar, to taste
  • Ground black pepper, to taste
  • A small amount of oil for frying
  • A splash of water

Instructions:

  1. Begin by cutting the chicken into bite-sized pieces. Place the chicken pieces in a pot of water and bring to a boil. Let it simmer for about 5 minutes to partially cook the chicken and remove excess impurities.

  2. Heat a small amount of oil in a large skillet or wok over medium heat. Add the sliced garlic, onion, and green bird’s eye chilies. Sauté until the garlic and onions are soft and fragrant, and the chilies begin to release their aroma.

  3. Add the partially cooked chicken pieces to the skillet. Stir well to combine with the sautéed garlic, onion, and chilies.

  4. Pour in a splash of water to help the flavors meld together and to create a bit of sauce. Season with salt, sugar, and ground black pepper to taste. Adjust the seasoning as needed to balance the flavors.

  5. Continue to cook, stirring occasionally, until the chicken is fully cooked and tender, and the flavors are well absorbed.
