Mesere Daging Sapi: A Flavorful Indonesian Beef Stew

Ingredients:

  • 250 grams beef (preferably a tender cut)
  • 1 liter water (for boiling the beef)
  • 5 large cloves garlic
  • 3 shallots
  • 3 large red chilies
  • 5 small red bird’s eye chilies
  • 1/2 thumb-sized piece of high-quality shrimp paste (terasi)
  • 2 pieces of tamarind (asam kandis)
  • 3 kaffir lime leaves (daun jeruk purut)
  • Salt, Royco seasoning, and Diabetasol (to taste)
  • Cooking oil (for frying)

Instructions:

  1. Prepare the Beef:

    • Begin by boiling the beef in 1 liter of water until tender. Once cooked, reserve the broth and cut the beef into thin strips, following the grain. Shred the strips roughly and set aside.
  2. Prepare the Spice Paste:

    • In a mortar and pestle, grind together the garlic, shallots, red chilies, bird’s eye chilies, and shrimp paste until a smooth paste forms. Set aside.
  3. Cook the Spice Paste:

    • Heat some cooking oil in a pan over medium heat. Add the prepared spice paste and sauté until fragrant and the raw aroma of the spices has dissipated.
  4. Combine Ingredients:

    • Add the shredded beef to the pan, along with a portion of the reserved beef broth. Stir well to ensure the beef is thoroughly coated with the spice mixture.
  5. Season and Simmer:

    • Incorporate the salt, Royco seasoning, Diabetasol, kaffir lime leaves, and tamarind into the mixture. Stir everything together and allow it to simmer until the liquid has reduced, but be careful not to let it dry out completely.
  6. Finish and Serve:

    • Once the stew has reached the desired consistency, turn off the heat. Transfer the Mesere Daging Sapi to a serving dish and enjoy!
