Spicy Shredded Chicken (Ayam Suwir Pedas)

Ingredients:

  • 250 grams chicken breast
  • 15 red curly chilies
  • 3 red bird’s eye chilies
  • 5 shallots
  • 3 cloves garlic
  • 1 segment of lesser galangal
  • 1 segment of turmeric
  • 1 tsp shrimp paste (terasi)
  • 2 bay leaves
  • 4 kaffir lime leaves
  • 2 lemongrass, bruised
  • 2 slices galangal
  • 2 tbsp tamarind juice
  • 2 tbsp grated palm sugar
  • Salt
  • Chicken stock powder
  • 300 ml water
  • Cooking oil

Instructions:

  1. Prepare the Chicken: Rinse the chicken breast thoroughly, blanch it briefly, then rinse again. Boil until cooked through, then shred the chicken into small pieces. Set aside.

  2. Prepare the Spice Paste: Blend together the red curly chilies, shallots, garlic, turmeric, shrimp paste, and a pinch of salt until smooth.

  3. Cooking the Spice Paste: Heat some cooking oil in a pan. Sauté the blended spice paste until fragrant and half-cooked. Add the bruised lemongrass, bay leaves, kaffir lime leaves, and galangal slices. Continue sautéing until the spices are fully cooked and aromatic.
