Spicy Indonesian Shredded Chicken Delight

Shredded Spicy Chicken (Suwir Ayam Balado)

Ingredients:

  • 1/2 chicken, cleaned and cut into pieces
  • 12 cloves garlic
  • 1 onion
  • 1 ounce red chilies (adjust according to spiciness preference)
  • 3 kaffir lime leaves
  • Salt, to taste
  • Sugar, to taste
  • Chicken broth seasoning (optional)
  • Cooking oil

Instructions:

  1. Prepare the Chicken: Wash the chicken thoroughly. In a pot, bring water to a boil and cook the chicken until tender, about 20-30 minutes. This will make it easier to shred later.

  2. Prepare the Spice Paste: While waiting for the chicken to cook, prepare the spice paste. Using a mortar and pestle or a food processor, grind together garlic, onion, red chilies, and a pinch of salt until it forms a smooth paste.

  3. Shred the Chicken: Once the chicken is cooked, remove from the pot and shred it into small pieces using your fingers or forks.

  4. Cooking Process: Heat a little cooking oil in a pan. Add the spice paste and sauté until fragrant.

  5. Combine Chicken: Add the shredded chicken to the pan. Stir well to combine with the spice paste.

  6. Seasoning: Season with salt, sugar, and chicken broth seasoning (if using), according to your taste preferences. Stir fry until the chicken is well-coated with the spices and fully cooked.

  7. Add Kaffir Lime Leaves: Add kaffir lime leaves to the pan and cook for another minute until everything is well-incorporated.

  8. Serve: Transfer to a serving dish and garnish with additional kaffir lime leaves if desired. Serve hot with steamed rice or as a side dish.
