Spicy Shredded Mackerel (Suwir Tongkol Pedas)
Ingredients:
- 1/2 kg Mackerel (Ikan Tongkol)
- 3 Kaffir Lime Leaves (daun jeruk)
- 2 Stalks Lemongrass (buah serai)
- Spice Paste (Bumbu Halus):
- 4 Cloves Garlic (bawang putih)
- 5 Shallots (bawang merah)
- 3 Candlenuts (optional) (kemiri)
- 2 cm Turmeric (kunyit)
- 2 cm Ginger (jahe)
- Chilies (adjust to taste for spiciness)
Steps:
- Prepare the Spice Paste: Blend the garlic, shallots, candlenuts (if using), turmeric, ginger, and chilies into a smooth paste. This should take about 2 minutes.
- Slice the Kaffir Lime Leaves: Thinly slice the kaffir lime leaves and set aside.
- Cook the Mackerel: Fry the mackerel until it is half-cooked. Once cooled slightly, use a fork to shred the fish into small pieces, discarding the bones.
- Sauté the Spice Paste: In a pan, heat a small amount of oil and sauté the spice paste until it becomes fragrant.
- Combine and Cook: Add the shredded mackerel, kaffir lime leaves, and lemongrass to the pan. Season with salt and sugar to taste.
- Taste and Adjust: Sample the dish and adjust the seasoning if necessary.
