Indonesian Spicy Smashed Fried Chicken (Ayam Geprek)
Ingredients:
- 1/2 kg chicken, cut into 6 pieces
- Chicken marination (ground):
- 3 cloves garlic
- 1 tsp coriander seeds
- A pinch of turmeric (optional)
- 1 tsp tamarind paste
- Salt to taste
- Seasoning (if desired)
- 1 kaffir lime leaf
- 1 glass of water
- Smashed chili paste:
- 30 bird’s eye chilies
- 5 curly red chilies (if available)
- 2 cloves garlic
- 5 shallots
- Salt to taste
- A little oil
Steps:

Rinse the chicken thoroughly, then marinate it with the ground chicken seasoning. Add a glass of water, cover the pot, and let it simmer until the water reduces. Once reduced, turn off the stove.

Meanwhile, heat a little oil and sauté the garlic and shallots until half-cooked. Turn off the heat and add the chilies to the pan. Allow the garlic and chilies to cook briefly in the hot oil.

Once the chilies and garlic are slightly wilted, drain them. Heat the mixture and immediately grind it in a mortar and pestle, adding a little salt, sugar, and seasoning if desired.

Fry the chicken until golden brown, then immediately drain and place it in the mortar. Crush/smash the chicken.
