Stir-Fried Scrambled Eggs with Shallots
Ingredients:
- 2 eggs, beaten, scrambled, and set aside
- 2 tablespoons salted anchovies, fried until crispy (optional)
- 100 grams shallots, thinly sliced
- 10 red bird’s eye chilies, thinly sliced
- 1 teaspoon shrimp paste (terasi)
- Salt, to taste
- Granulated sugar, to taste
- Chicken broth powder, if desired
- Cooking oil, for sautéing

Prepare the Ingredients: Start by beating the eggs and cooking them into a scramble. Set the scrambled eggs aside. If using salted anchovies, fry them until crispy and set them aside as well.
