Stir-Fried Tofu and Tempeh (Oseng Tahu Tempe) Recipe

This delightful Indonesian dish brings together the rich flavors of tofu and tempeh, stir-fried with aromatic spices and a touch of sweetness from palm sugar. It’s a perfect side dish that pairs beautifully with steamed rice, adding a satisfying, protein-packed element to any meal.

Ingredients

Fried tofu (tahu kulit), cut into pieces 6 pieces
Tempeh (small block), cut into pieces 1/2 block
Shallots, roughly chopped 5 cloves
Garlic, finely minced 2 cloves
Bird’s eye chilies, thinly sliced 3 pieces
Red chilies, sliced diagonally 2 pieces
Galangal (lengkuas), crushed 1-inch piece
Bay leaves (daun salam) 2 leaves
Shrimp paste (terasi udang ABC) 1/2 package
Sweet soy sauce (kecap manis) 2 tablespoons
Salt, to taste As needed
Black pepper, to taste As needed
Palm sugar (gula jawa), to taste As needed
Water About 250 ml (1 cup)

Steps

  1. Prepare the Aromatics:
    Heat some oil in a pan over medium heat. Add the minced garlic and sauté until fragrant.

  2. Add Shallots and Spices:
    Stir in the roughly chopped shallots, bird’s eye chilies, red chilies, shrimp paste, crushed galangal, and bay leaves. Continue to cook until the shallots are softened and the mixture becomes aromatic.

  3. Combine Tofu and Tempeh:
    Add the tofu and tempeh to the pan. Stir gently to coat them with the aromatic mixture. Season with salt and pepper.

  4. Add Water and Seasoning:
    Pour in a bit of water (about 250 ml), followed by the sweet soy sauce and palm sugar. Stir to combine all the ingredients and adjust the seasoning to taste.

  5. Cook and Reduce:
    Let the mixture simmer until most of the liquid has evaporated, allowing the flavors to fully absorb into the tofu and tempeh. Make sure to taste and adjust seasoning as necessary.

  6. Serve:
    Once the water has reduced and the tofu and tempeh are well-coated with the flavorful sauce, remove the pan from heat. Serve the dish warm, accompanied by steamed rice. For those who love extra heat, feel free to add more chilies.
