Ingredients:
- 1/4 kg chicken breast, cut into 6 pieces
- 3 shallots, thinly sliced
- 1/4 onion, sliced
- 5 red chilies, sliced
- 2 bird’s eye chilies (adjust to taste), sliced
- 1 stalk spring onion, chopped
- 1 small tomato, diced
- 1 cm galangal
- 2 bay leaves
- 400 ml water
- Salt, to taste
- Brown sugar, to taste
- Sweet soy sauce (kecap manis), to taste
Ground Spices:
- 3 cloves garlic
- 1 candlenut
- 1/2 tsp white pepper
- 1 slice ginger
Instructions:

Heat some oil in a pan and sauté the shallots, onion, red chilies, and bird’s eye chilies until fragrant. Add the bay leaves and galangal.

Add the ground spices and stir-fry until fragrant and cooked through.

Add the chicken pieces, stir until well coated with the spices and onions.

Pour in the water and bring to a boil.

Season with salt, brown sugar, and sweet soy sauce according to your taste preference. For a sweeter flavor, use about half a small bottle of sweet soy sauce.

Adjust the seasoning, then simmer over low heat until the sauce thickens slightly, but ensure it doesn’t dry out. Use low heat throughout.

Add the spring onions and tomatoes. Stir briefly, then turn off the heat.
