Telor Ceplok Tauco

Ingredients

  • 6 eggs
  • 6 shallots, thinly sliced
  • 3 cloves garlic, thinly sliced
  • Green curly chilies, thinly sliced, to taste
  • Bird’s eye chilies, thinly sliced, to taste
  • 1 tomato, thinly sliced
  • 2 tablespoons tauco (fermented soybean paste)
  • Sweet soy sauce, to taste
  • Light soy sauce, to taste
  • Sugar, to taste
  • Water, as needed

Preparation Steps

  1. Prepare the Eggs: Fry the eggs sunny side up and set them aside.

  2. Sauté the Aromatics: In a pan, heat a little oil over medium heat. Add the shallots and garlic, sautéing until they become fragrant and translucent. Add the green curly chilies, bird’s eye chilies, and sliced tomato. Continue to sauté until the vegetables soften.

  3. Create the Sauce: Add the tauco to the pan, followed by a splash of sweet soy sauce and a pinch of sugar. Pour in a small amount of water to create a sauce. Stir well to combine all the ingredients.

  4. Combine and Cook: Place the fried eggs into the pan with the sauce. Taste the sauce and adjust the seasoning with additional salt or light soy sauce if needed. Allow the sauce to come to a boil and simmer until it is well absorbed into the eggs.

  5. Serve: Once the sauce has thickened and the flavors have melded, remove from heat and serve the Telor Ceplok Tauco hot with steamed rice.
