Telur Balado: Indonesian Spicy Egg Delight
Ingredients:
- 10 large eggs
- Spice Paste:
- 50 grams of curly red chilies, briefly boiled
- 8 shallots
- 1 clove of garlic
- 1 large tomato
- Salt and sugar, to taste
- 1 teaspoon sweet soy sauce
- 3 kaffir lime leaves
- Cooking oil for frying the eggs and sautéing the spice paste
Instructions:
-
Prepare the Eggs:
- Clean the eggs thoroughly and place them in a pot of water. Bring to a boil and cook until the eggs are hard-boiled, approximately 10 minutes.
- Once cooked, remove the eggs from the pot and let them cool. Peel off the shells and set aside.
-
Fry the Eggs:
- Heat a generous amount of cooking oil in a pan over medium heat. Carefully fry the peeled eggs until they are golden brown and crispy on all sides. Remove the eggs from the oil and drain them on paper towels.
-
Prepare the Spice Paste:
- While the eggs are frying, prepare the spice paste. In a blender or food processor, combine the boiled red chilies, shallots, garlic, and tomato. Blend until smooth.
-
Sauté the Spice Paste:
- In a separate pan, heat a little cooking oil over medium heat. Add the blended spice paste and kaffir lime leaves. Sauté the mixture until it becomes aromatic and the oil starts to separate from the paste.
-
Combine and Simmer:
- Stir in the sweet soy sauce, mixing well with the spice paste. Add salt and sugar to taste.
- Gently fold in the fried eggs, ensuring they are well-coated with the spice paste. Cook for an additional few minutes, allowing the flavors to meld together and the eggs to absorb the spices.
-
Serve:
- Transfer the eggs to a serving plate and enjoy this spicy, flavorful Indonesian dish. Telur Balado pairs beautifully with steamed rice for a complete meal.
Enjoy the vibrant, spicy flavors of Telur Balado, a beloved Indonesian dish that adds a delightful kick to your dining experience.
