Pindang Ikan Mas ala Bundakeia: A Delicious Indonesian Fish Dish

Ingredients:

  • 1 kg of tilapia (preferably with 8-10 fillets)
  • 1 lime
  • 2 pieces of turmeric, sliced
  • 1 piece of ginger
  • 2 pieces of galangal, sliced
  • 2 pieces of palm sugar
  • Salt to taste
  • 2 tablespoons of sweet soy sauce
  • A bunch of bay leaves
  • A bunch of lemongrass
  • For the spice paste:
    • 10 shallots
    • 7 cloves of garlic
    • 7 roasted candlenuts
    • 2 pieces of turmeric (finger-sized)

Steps:

  1. Prepare the Fish:
    Begin by cleaning the tilapia thoroughly. For best results, avoid scoring the fish to keep it from breaking apart during cooking. Rub the fish with lime juice and salt, then fry until crispy and set aside.

  2. Prepare the Palm Sugar Syrup:
    Melt the palm sugar in a pan to create a syrup. Set this aside for later use.

  3. Make the Spice Paste:
    Blend the shallots, garlic, roasted candlenuts, and turmeric into a fine paste. Combine this paste with the melted palm sugar, adding sweet soy sauce and salt to taste. Mix thoroughly and set aside.

  4. Prepare the Pressure Cooker:
    Line the bottom of a pressure cooker with bay leaves and lemongrass. Arrange the fried tilapia in a single layer in the pot, making sure to distribute the fish evenly. Sprinkle the sliced turmeric, ginger, and galangal over the fish.

  5. Cook the Fish:
    Pour the spice paste mixture over the fish, ensuring that the fish is completely submerged. Close the lid of the pressure cooker and cook on high for 1.5 hours, or until the fish is tender.

  6. Serve:
    Once cooked, carefully release the pressure and open the lid. Serve the pindang ikan mas hot, enjoying the rich flavors and aromatic spices.
