Pepes Tahu Kornet Sapi Recipe

Pepes Tahu Kornet Sapi is a flavorful Indonesian dish where tofu is mixed with corned beef and aromatic spices, then steamed in banana leaves for a delightful and fragrant result. This recipe is perfect for those looking to explore traditional Indonesian flavors with a touch of creativity.

Ingredients:

  • 8 pieces of white tofu (preferably small, mashed)
  • 3 stalks of scallions (finely sliced)
  • 1 packet of corned beef
  • Beef bouillon powder (to taste)
  • 2 large eggs (or 3 small ones)
  • Banana leaves (for wrapping, as needed)

For the spice paste:

  • 4 red bird’s eye chilies
  • 4 curly red chilies
  • 5 shallots
  • 4 cloves of garlic
  • Salt (to taste)

Instructions:

  1. Prepare the Spice Paste:

    • Blend the red bird’s eye chilies, curly red chilies, shallots, and garlic together until smooth. Add salt to taste and set aside.
  2. Mix Ingredients:

    • In a large bowl, combine the mashed tofu, finely sliced scallions, and corned beef. Mix well.
    • Add the prepared spice paste to the bowl along with the beef bouillon powder. Adjust the seasoning to taste.
    • Stir in the eggs until the mixture is well combined and smooth.
  3. Wrap the Mixture:

    • Cut the banana leaves into square or rectangular pieces. To make the wrapping easier, briefly soften the banana leaves over an open flame or in a hot water bath to make them pliable.
    • Take a piece of banana leaf and place about 3 tablespoons of the tofu mixture onto the center of the leaf. Fold the edges of the leaf to enclose the filling and secure it into a neat packet.
  4. Steam the Pepes:

    • Arrange the wrapped packets in a steamer. Steam over boiling water for about 15 minutes, or until the tofu is cooked through and firm.
  5. Serve:

    • Carefully remove the pepes from the steamer and unwrap them. Serve hot, and enjoy the aromatic and savory flavors of this traditional Indonesian dish.
