Bado Telor vs. Tahu: A Flavorful Indonesian Delight

Ingredients:

  • 1/4 pound chicken eggs (approximately 4 eggs)
  • 5 pieces of yellow or white tofu
  • 5 shallots
  • 2 cloves garlic
  • Chili peppers (to taste)
  • 1 medium tomato
  • Cooking oil (as needed)
  • 1 teaspoon salt
  • 1/2 teaspoon seasoning (such as Sasa or similar)
  • 5 cups water (for boiling)

Instructions:

  1. Prepare the Eggs: Begin by boiling the eggs in a pot of water until they are fully cooked. Once the eggs are hard-boiled, remove them from the pot and let them cool. Once cool enough to handle, peel off the shells.

  2. Prepare the Tofu: While the eggs are cooling, cut the tofu into bite-sized pieces. Heat some cooking oil in a pan and fry the tofu pieces until they are golden and crispy. Remove the tofu from the pan and set it aside.

  3. Blend the Spices: In a blender or food processor, combine the shallots, garlic, chili peppers, and tomato. Blend until the mixture forms a smooth paste.

  4. Cook the Spices: In the same pan used for frying the tofu, add a little more cooking oil if needed. Heat the oil and sauté the blended spice paste until it becomes fragrant and the oil begins to separate from the paste.

  5. Add Seasoning: Season the paste with salt and Sasa (or a similar seasoning). Add a splash of water to the pan to prevent the paste from drying out.

  6. Combine Ingredients: Add the fried tofu and peeled hard-boiled eggs to the pan with the spice paste. Stir well to ensure that all the ingredients are evenly coated with the paste. Cook for a few more minutes, allowing the flavors to meld together.

  7. Adjust Seasoning and Serve: Taste the dish and adjust the seasoning if needed. Once everything is well-combined and heated through, remove from heat. Serve hot and enjoy this flavorful dish.
