Tahu Buncis Tauco: A Flavorful Indonesian Stir-Fry

Ingredients:

  • 6 pieces of white tofu (or brown tofu, if preferred)
  • Green beans (amount as desired)
  • 5 large green chilies
  • 6 shallots
  • 3 cloves of garlic
  • 1 cm ginger, crushed
  • 1 segment of galangal, crushed
  • 2 bay leaves
  • Brown sugar, to taste
  • Salt, sugar, and chicken bouillon powder, to taste
  • Water
  • 2 packets of tauco (fermented soybean paste, I used Tabera brand)
  • 1 tomato, diced

Instructions:

  1. Prepare the Tofu: Cut the tofu into pieces according to your preference. Heat oil in a pan and fry the tofu until it’s half-cooked and golden brown. Remove from the pan and set aside.

  2. Sauté Aromatics: In the same pan, sauté the shallots and garlic until fragrant. Add the sliced green chilies, crushed ginger, galangal, and bay leaves. Continue to sauté until the mixture becomes fragrant and the aromatics start to soften.

  3. Add the Tauco and Flavorings: Stir in the tauco and add enough water to create a sauce. Mix in the green beans, brown sugar, salt, sugar, and chicken bouillon powder to taste. Remember, tauco is already salty, so be cautious with the salt.

  4. Combine Ingredients: Once the green beans are starting to soften, add the fried tofu and diced tomato to the pan. Stir well to combine and cook until the tofu is heated through and the sauce has reduced slightly.

  5. Adjust Seasoning: Taste and adjust the seasoning if needed. Once everything is well-cooked and the flavors have melded together, remove from heat.

  6. Serve: Transfer the Tahu Buncis Tauco to a serving dish and enjoy as a delicious side or main dish.
