Tumis Tahu Telur Puyuh

Ingredients:

  • 4 blocks of tofu, cut into cubes
  • 15 quail eggs, boiled
  • 3 cloves garlic, thinly sliced
  • 4 shallots, thinly sliced
  • 1 large red chili, sliced diagonally
  • 10 bird’s eye chilies
  • 2 bay leaves
  • 1 stalk lemongrass, bruised
  • 1 cm galangal, bruised
  • Salt and sugar, to taste
  • 2 tablespoons sweet soy sauce
  • 2 tablespoons oyster sauce
  • 100 ml water (adjust as needed)
  • Oil, for frying and sautéing

Instructions:

  1. Begin by cutting the tofu into cubes. Heat oil in a pan and briefly fry the tofu until golden. Remove and drain on paper towels.

  2. In the same pan, sauté the garlic, shallots, red chili, and bird’s eye chilies until fragrant. Add the bay leaves, lemongrass, and galangal, continuing to sauté to release their flavors.

  3. Pour in a bit of water and add the fried tofu and boiled quail eggs. Season with salt, sugar, oyster sauce, and sweet soy sauce. Stir well to combine and ensure the tofu and eggs are evenly coated with the sauce.

  4. Let the mixture cook until the flavors are well absorbed and the sauce has slightly thickened. Adjust seasoning to taste.
