Sambal Goreng Tahu Kulit
Ingredients:
- 1 package of tofu skin (tahu kulit), cut into bite-sized pieces
- Spice Paste:
- 3 cm ginger, peeled and chopped
- 5 cm galangal, peeled and chopped
- 3 cloves garlic, peeled
- 5 shallots, peeled
- 7 red chilies, seeds removed
- 4 candlenuts
- 1 sachet of sweet soy sauce (kecap manis)
- Salt and seasoning to taste
- 100 ml water
- Cooking oil

Prepare the Tofu Skin: Cut the tofu skin into bite-sized pieces according to your preference.

Make the Spice Paste: In a blender or food processor, combine the ginger, galangal, garlic, shallots, red chilies, and candlenuts. Blend into a smooth paste.

Cook the Spice Paste: Heat a generous amount of cooking oil in a skillet over medium heat. Add the spice paste and sauté until fragrant and golden brown.

Add Liquid and Seasonings: Pour in 100 ml of water and stir in the sweet soy sauce, salt, and seasoning. Adjust the seasoning to taste.

Combine with Tofu Skin: Add the tofu skin to the skillet. Stir well to coat the tofu pieces with the spice paste.

Simmer: Cook until the liquid has mostly evaporated and the tofu skin is well-seasoned, stirring occasionally.

Serve: Once the tofu skin is cooked and the flavors are well-combined, remove from heat. Serve warm as a delicious accompaniment or main dish.
