Tumis Tahu Udang Rebon: A Delightful Indonesian Stir-Fry


Ingredients:

  • 8 pieces of tofu, cut into 6 parts each
  • 1.5 tablespoons dried shrimp (udang rebon)
  • 4 cloves garlic, minced
  • 5 shallots, sliced
  • 1 small onion, chopped
  • 5 red bird’s eye chilies, sliced
  • 3 large green chilies, sliced
  • 2 bay leaves
  • 1 tablespoon oyster sauce
  • 150 ml water
  • Salt, to taste
  • Chicken stock, to taste
  • Palm sugar, to taste

Instructions:

  1. Prepare the Ingredients: Begin by washing the tofu and cutting it into 6 pieces per block. Rinse the dried shrimp in warm water, then drain thoroughly. Slice the garlic, shallots, onion, red bird’s eye chilies, and green chilies.

  2. Sauté Aromatics: Heat a pan over medium heat and add a touch of oil. Sauté the sliced shallots, minced garlic, and chopped onion until fragrant and golden brown.

  3. Add Shrimp: Incorporate the drained dried shrimp into the pan. Continue to cook until the shrimp release their aroma and become slightly crispy.

  4. Incorporate Chilies and Bay Leaves: Add the sliced red bird’s eye chilies, green chilies, and bay leaves to the pan. Stir well to combine with the aromatic base.

  5. Add Liquid and Seasonings: Pour in the water and allow the mixture to come to a gentle boil. Once boiling, stir in the oyster sauce, salt, chicken stock, and palm sugar. Adjust the seasoning to taste, balancing the flavors as desired.

  6. Simmer with Tofu: Gently add the tofu pieces into the pan. Let the dish simmer for a few minutes, allowing the tofu to absorb the flavors and the sauce to thicken slightly.

  7. Serve: Once the tofu is well-coated and heated through, remove from heat. Serve hot with steamed rice or enjoy as a flavorful side dish.
