Simple Spicy Tuna Recipe (Ikan Tongkol Balado)
Ingredients:
- 500 grams of tuna (ikan tongkol)
- For the Spice Blend:
- 7 shallots
- 1 garlic clove
- 8 curly red chilies
- 4 birdโs eye chilies (or adjust to taste)
- Salt to taste
- Sugar to taste
- A dash of flavor enhancer (optional)

Prepare the Tuna:
- Clean the tuna thoroughly until the water runs clear. Itโs important to ensure the fish is well-cleaned to avoid any bitterness.

Make the Spice Blend:
- Blend or grind the shallots, garlic, curly red chilies, and birdโs eye chilies into a smooth paste.

Fry the Tuna:
- Heat some cooking oil in a pan.
- Fry the tuna pieces until they turn golden brown and crispy. Remove from the oil and drain on paper towels to remove excess oil.

Prepare the Balado Sauce:
- In the same pan, add a bit more oil if needed and heat it up.
- Add the prepared spice blend to the hot oil. Cook the mixture for about 5-10 minutes, or until the spices are aromatic and the oil starts to separate.

Combine and Serve:
- Add the fried tuna pieces to the pan with the balado sauce. Stir well to coat the tuna with the spicy sauce.
- Cook for a few more minutes to let the flavors meld together.
