    • 2 tamarind pieces

    • ½ tablespoon palm sugar or granulated sugar
    • 1-2 belimbing wuluh (optional, for a tangy touch)
    • 250 ml water

Instructions:

  1. Prepare the Tuna:

    • Cut the tuna into pieces according to your preference and set aside. Ensure the fish is thoroughly cleaned.
  2. Make the Spice Paste:

    • Blend the shallots, garlic, dried red chilies (or fresh red chilies), turmeric, and galangal into a smooth paste. If using a blender, add a little water to ease the blending process.
  3. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Sauté the spice paste until fragrant and the oil begins to separate from the paste, about 5 minutes.
  4. Simmer the Tuna:

    • Add the prepared spice paste to the pan with the sautéed onions. Stir well to combine. Pour in the water and bring to a simmer.
  5. Add the Tuna:

    • Gently add the tuna pieces to the pan. Allow the fish to cook in the spiced sauce until it is fully cooked and the flavors have melded, approximately 10-15 minutes. Ensure that the tuna absorbs the rich flavors of the sauce.
  6. Season and Finish:

    • Add salt and palm sugar (or granulated sugar) to taste. If using, add belimbing wuluh during the last few minutes of cooking for a tangy twist.
  7. Serve:
