  • 3 kaffir lime leaves, thinly sliced (remove the central vein)
  • 1 stalk of green onion, finely sliced
  • 2 bay leaves (optional)

  • 8 red chilies
  • 10 bird’s eye chilies (adjust to taste)
  • 7 shallots
  • 5 cloves of garlic
  • A slice of galangal
  • A thumb-sized piece of ginger
  • 1 stalk of lemongrass, use the white part only
