Ayam Kampung Kuah Santan Pedas: Spicy Village Chicken in Coconut Milk

Ingredients:

  • 1 kg village chicken (ayam kampung), cut into pieces
  • 1 sachet instant coconut milk (I used Bumas coconut milk)
  • Spice Paste:
    • 1 candlenut
    • 6 cloves garlic
    • 1 thumb-sized piece of turmeric
    • 1/2 thumb-sized piece of kencur (aromatic ginger)
    • A pinch of shrimp paste (terasi)
    • 9 bird’s eye chilies (adjust according to heat preference)
    • 1 tablespoon salt
    • 2 tablespoons granulated sugar
  • Additional Spices:
    • 1 tomato, diced
    • 3 bay leaves
    • 3 kaffir lime leaves
    • 1 stalk lemongrass, bruised
    • Instant seasoning (Masako or Royco)
    • Cooking oil for sautéing
    • Chicken stock from boiling the chicken

Instructions:

  1. Cook the Chicken:

    • Place the cut chicken pieces in a pot. Cover with water and bring to a boil. Simmer until the chicken is fully cooked and tender.
  2. Prepare the Spice Paste:

    • Blend or grind the candlenut, garlic, turmeric, kencur, shrimp paste, and bird’s eye chilies into a smooth paste. Add salt and sugar to the mixture.
  3. Sauté the Spice Paste:

    • Heat cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant.
  4. Add Additional Spices:

    • Incorporate the diced tomato, bay leaves, kaffir lime leaves, and bruised lemongrass into the pan. Sauté until the tomato is soft and the spices are well combined.
  5. Combine Chicken and Spices:

    • Add the cooked chicken pieces to the pan. Stir to coat the chicken with the spice mixture.
  6. Add Stock and Coconut Milk:

    • Pour in the chicken stock to your desired consistency. Stir well and bring to a simmer. Add the instant coconut milk and mix until fully incorporated. Continue to cook until the mixture reaches a gentle boil.
  7. Season and Adjust:

    • Season with instant seasoning according to your taste. Adjust salt and sugar if needed.
  8. Serve:

    • Your spicy village chicken in coconut milk is ready to serve. Enjoy this rich and flavorful dish with steamed rice or your favorite side.
