Indonesian Village Chicken Germasem

Ingredients:

  • 1 free-range village chicken, cleaned thoroughly
  • 10 shallots
  • 2 cloves garlic
  • 4 candlenuts
  • 10 red chilies
  • 10 bird’s eye chilies
  • 1/2 tbsp ground white pepper
  • 4 cm ginger
  • 6 cm galangal
  • 3 bay leaves
  • 4 kaffir lime leaves (torn)
  • 1 lemongrass (bruised)
  • 2 tomatoes
  • 1/2 tbsp granulated sugar
  • 1/2 tbsp salt
  • Seasoning powder, to taste (optional)

Instructions:

  1. Grind and sauté the spices (except bay leaves, kaffir lime leaves, lemongrass, and tomatoes) until fragrant.
  2. Add bay leaves, kaffir lime leaves, and lemongrass.
  3. Add the village chicken and a small amount of water (avoid adding too much water initially to prevent dilution). Wait until the water reduces, then add more as needed.
  4. Add tomatoes and cook until the chicken is thoroughly cooked.
  5. Indonesian Village Chicken Germasem is ready to be served.
