Indonesian Village Chicken Germasem
Ingredients:
- 1 free-range village chicken, cleaned thoroughly
- 10 shallots
- 2 cloves garlic
- 4 candlenuts
- 10 red chilies
- 10 bird’s eye chilies
- 1/2 tbsp ground white pepper
- 4 cm ginger
- 6 cm galangal
- 3 bay leaves
- 4 kaffir lime leaves (torn)
- 1 lemongrass (bruised)
- 2 tomatoes
- 1/2 tbsp granulated sugar
- 1/2 tbsp salt
- Seasoning powder, to taste (optional)
Instructions:
- Grind and sauté the spices (except bay leaves, kaffir lime leaves, lemongrass, and tomatoes) until fragrant.
- Add bay leaves, kaffir lime leaves, and lemongrass.
- Add the village chicken and a small amount of water (avoid adding too much water initially to prevent dilution). Wait until the water reduces, then add more as needed.
- Add tomatoes and cook until the chicken is thoroughly cooked.
- Indonesian Village Chicken Germasem is ready to be served.
