Ingredients:

- 2 stalks lemongrass, bruised
- 2 bay leaves
- 1 tablespoon seasoning powder (or to taste)

- 1 thumb-sized piece of ginger

- In a blender or food processor, combine the red chilies, shallots, garlic, turmeric, and ginger. Blend until a smooth paste forms.

- Heat a little oil in a large pan over medium heat. Add the spice paste and cook, stirring frequently, until fragrant and the oil starts to separate from the paste.

- Add the bruised lemongrass and bay leaves to the pan. Stir well to combine with the spice paste.
