Spicy Indonesian Yellow Chicken with Fresh Basil

Ayam Bumbu Kuning Kemangi (Yellow Spiced Chicken with Basil)

Ingredients

  • 1/2 kg chicken, cut into pieces
  • 5 shallots
  • 2 cloves garlic
  • Bird’s eye chili peppers, to taste
  • 1 fresh tomato
  • Turmeric
  • Coriander seeds
  • Cumin seeds
  • 2 dried bay leaves
  • Lemongrass leaves
  • Kaffir lime leaves
  • Fresh basil, to taste
  • Salt, sugar, and seasoning, to taste

Instructions

  1. Prepare the Chicken: Wash the chicken pieces thoroughly. Boil them in water with a bit of salt and seasoning until they are cooked and tender. Once done, remove the chicken from the pot and let it cool.

  2. Fry the Chicken: In a frying pan, heat some oil and lightly fry the boiled chicken pieces until they are golden but not too dry. Set aside and drain the excess oil.

  3. Prepare the Spice Paste: In a food processor or mortar and pestle, blend the shallots, garlic, bird’s eye chili peppers, tomato, turmeric, coriander seeds, and cumin seeds into a smooth paste.

  4. Sauté the Spice Paste: In a large pan, heat a bit of oil and sauté the spice paste until it becomes fragrant. Add the lemongrass leaves, dried bay leaves, and kaffir lime leaves, stirring occasionally to release their aromas.

  5. Combine Chicken and Spice Paste: Add the fried chicken pieces to the pan with the sautéed spice paste. Pour in enough water to cover the chicken partially. Season with salt and sugar to taste. Stir well to ensure the chicken is fully coated with the spice mixture. Allow it to simmer so the flavors meld together.

  6. Finish with Basil: Just before serving, add the fresh basil leaves. Stir briefly until the basil is wilted. Taste and adjust the seasoning if needed.

  7. Serve: Remove from heat and transfer the Ayam Bumbu Kuning Kemangi to a serving dish. Enjoy it hot with steamed rice.
