Ginger 1-inch piece, finely chopped
Curd (Dahi / Yogurt) 1/4 cup
Cinnamon Stick (Dalchini) 1-inch stick
Black Cardamom (Badi Elaichi) 2 pods
Coriander Powder (Dhania) 2 teaspoons
Cumin Powder (Jeera) 1/2 teaspoon
Garam Masala Powder 1/2 teaspoon
Red Chilli Powder 1/2 teaspoon
Homemade Tomato Puree 1/2 cup
Mustard Oil 1 tablespoon
Salt As per taste
Coriander Leaves (Dhania) For garnish

Instructions:

  1. Prepare the Raw Jackfruit:
    Start by cutting the raw jackfruit (Kathal) into manageable pieces. To avoid the sticky sap, grease your hands and knife with a little oil before cutting. Once cut, place the jackfruit pieces in a bowl of water with a pinch of salt to prevent browning.

  2. Prepare the Curd Masala:
    In a separate bowl, whisk together the curd, homemade tomato puree, turmeric powder, red chilli powder, coriander powder, cumin powder, and garam masala powder. Add a little water to make a smooth paste and set this aside for later use.

  3. Cook the Sabzi:
    In a small pressure cooker, heat 1 tablespoon of mustard oil over medium heat. Once the oil is hot, add the asafoetida (hing) and allow it to sizzle for a few seconds.
    Add the finely chopped onions, garlic, and ginger, sautéing until the onions turn golden brown.

  4. Add the Spices:
    To the sautéed onions, add the cinnamon stick and black cardamom. Stir the spices into the onion mixture to release their flavors.

  5. Add the Curd Masala:
    Now, add the prepared curd masala mixture to the pressure cooker. Stir well to combine with the onion and spice mixture.

  6. Add Jackfruit and Potatoes:
    Add the prepared raw jackfruit pieces and diced potatoes into the pressure cooker. Stir to coat everything evenly in the masala.

  7. Cooking:
    Add salt to taste and pour in 1 cup of water. Stir well, ensuring that everything is combined. Cover the pressure cooker with its lid, and cook on medium heat for about 3-4 whistles. Afterward, turn off the heat and allow the pressure to release naturally.

  8. Final Touch:
    Once the pressure has released, open the cooker and give the sabzi a good stir. Taste and adjust salt and spices if necessary. Garnish with freshly chopped coriander leaves for a fresh, aromatic finish.

  9. Serving:
    Transfer the Kathal Masala Sabzi to a serving bowl and serve it hot. This dish pairs wonderfully with phulkas, jeera rice, or a simple carrot salad on the side. For a diabetic-friendly Indian meal, serve it alongside Masala Jowar Methi Roti and Kollu Pachadi for a wholesome and complete meal.
