Instructions

  1. Prepare the Korma Masala
    Begin by preparing the korma masala. In a grinder, combine the roasted poppy seeds and freshly grated coconut with just enough water to form a smooth paste. Set it aside. This paste will add a creamy richness to the korma.

  2. Boil the Jackfruit Seeds
    Bring a saucepan of water to a boil on medium heat. Add the jackfruit seeds to the boiling water and let them cook for about 20 minutes. Once they are tender, drain the water. Using a knife, peel off the white skin of the jackfruit seeds, then cut them in half. Set aside.

  3. Fry the Spices
    Heat a pressure cooker on medium flame. Add oil to the pot, and once hot, toss in the fennel seeds, bay leaf, stone flower, star anise, cinnamon stick, and cardamom pods. Fry these spices for about 10 seconds until they begin to release their fragrant oils.
