Instructions:

1. Dough Directions:

  • Combine flour, salt, and curry powder in the work bowl of a food processor, pulsing to combine.
  • Add butter or shortening and process until the mixture resembles fine crumbs.
  • In a separate bowl, combine water, vinegar, and egg yolks.
  • Add the wet mixture to the work bowl and pulse until a ball of dough forms.
  • Cover the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.

2. Filling Directions:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a mixing bowl, combine ground beef, chopped scallions, salt, chopped onion, and 1 tablespoon of thyme.
  • Cook the meat mixture in a frying pan with a teaspoon of cooking oil over medium heat until the meat is fully cooked, approximately 10 minutes.
  • Drain off any excess fat from the pan.
  • Stir in breadcrumbs, the remaining thyme, black pepper, finely chopped habanero, paprika, and ketchup.
  • Cook for an additional 15 minutes, adding water as needed to keep the mixture moist.
  • Allow the filling to cool before assembling the patties.

3. Assembly and Baking:

  • Roll out the dough to approximately 1/8-inch thickness.
  • Cut the dough into 6-inch circles or desired shapes.
  • Spoon the prepared filling onto one half of each dough circle.
  • Brush the edges of the dough with beaten egg.
  • Fold the dough over the filling to create a half-moon shape, firmly pressing the edges together and sealing them with a fork.
  • Place the assembled patties on a greased baking sheet.
  • Bake in the preheated oven for 20-25 minutes, or until the patties are golden brown and cooked through.
  • If making cocktail-sized patties, cut the dough into 3-inch circles before filling and baking.
