Instructions:

  1. Prep the Mushrooms:

    • Begin by washing the button mushrooms thoroughly—wash them about 4 to 5 times to remove any dirt or debris. After washing, slice the mushrooms into thick pieces or quarters, depending on your preference.
  2. Prepare the Tomato Puree:

    • Take a blender or food processor and add the chopped tomatoes, garlic, ginger, and a little water. Blend this mixture into a smooth, thick paste and set it aside.
  3. Cook the Spices:

    • Heat the oil in a kadai or large pan over medium heat. Once the oil is hot, add cumin seeds, bay leaves, fenugreek seeds, cloves, whole black pepper, and a piece of cinnamon stick. Sauté these spices for about 15 seconds, allowing them to release their fragrance.
  4. Sauté the Onions and Vegetables:

    • Add the finely chopped onions to the pan and cook them until they become soft and translucent. This should take about 4-5 minutes. Once the onions are soft, add the finely chopped green capsicum. Sauté for an additional 2 minutes to allow the capsicum to soften slightly but retain its crunch.
  5. Add the Tomato Puree and Spices:

    • Pour the tomato paste into the pan and stir well. Let this mixture cook for 5-6 minutes, or until it starts to release oil and the flavors begin to blend. Add turmeric powder, red chili powder, coriander powder, and salt. Mix everything thoroughly and cook for another 2 minutes.
  6. Cook the Mushrooms:

    • Now, add the sliced mushrooms to the pan. Mix them well with the prepared curry base, ensuring the mushrooms are coated with the spices. Cook the mushrooms on medium heat for 10-15 minutes, stirring occasionally, until the mushrooms are tender and cooked through.
