Kailan Cah Ayam Penyet: A Flavorful Stir-Fry with Crispy Chicken

Ingredients:

  • 1 bunch fresh Kailan (Chinese broccoli), roughly chopped
  • 2 cloves garlic, thinly sliced
  • 1/2 teaspoon fish sauce (optional)
  • 1 chicken breast fillet, thinly sliced
  • 2 shallots, thinly sliced
  • 5 red bird’s eye chilies
  • 1 large red chili
  • 1 teaspoon Bamboe fried chicken seasoning
  • 1/2 cup water
  • Salt and pepper to taste
  • 2 tablespoons cooking oil

Instructions:

  1. Prepare the Chicken:

    • Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the sliced chicken fillet and cook with Bamboe fried chicken seasoning until fully cooked and slightly crispy. Once done, remove the chicken from the pan and set aside.
  2. Make the Sambal Penyet:

    • In the same pan, add the remaining tablespoon of oil. Sauté the thinly sliced shallots and garlic until fragrant and slightly golden.
    • Add the red bird’s eye chilies and large red chili to the pan, stirring until the chilies start to soften.
    • Stir in the Kailan leaves and pour in the water. Add fish sauce (if using), salt, and pepper. Cook until the Kailan begins to wilt.
  3. Combine and Serve:

    • Return the crispy chicken to the pan and mix well with the Kailan and sambal mixture. Continue to cook until the Kailan is tender and the flavors have melded together.
    • Adjust seasoning if needed.
  4. Serving Suggestion:

    • Serve the Kailan Cah Ayam Penyet warm, accompanied by a serving of steamed white rice for a complete and satisfying meal.
