Instructions

  1. Prepare the Boiled Eggs:
    Start by boiling the eggs. Place the eggs in a pot with water and bring it to a boil. Once the water reaches a rolling boil, lower the heat and simmer for about 10 to 12 minutes. After boiling, remove the eggs from the pot, let them cool, peel the shells, and set the eggs aside.

  2. Prepare the Tomatoes:
    While the eggs are cooling, chop the tomatoes in half. Place them in a pressure cooker with 2 tablespoons of water. Pressure cook for 2-3 whistles, then turn off the heat. Once the pressure has released, peel the skin off the tomatoes. Chop the peeled tomatoes and set them aside. Keep the water that was released during the cooking of the tomatoes; this will be used to make the gravy.

  3. Cooking the Egg Roast Masala:
    In a Kadai (a deep, wide pan), heat the coconut oil over medium heat. Add the mustard seeds and let them crackle for a few seconds.

  4. Sautรฉing the Onions and Spices:
    Add the sliced onions, ginger, green chilies, and crushed garlic to the Kadai. Sautรฉ the mixture, stirring occasionally, until the onions soften and turn golden brown.

  5. Adding the Curry Leaves and Spices:
    Once the onions are done, add the torn curry leaves and the chopped tomatoes. Follow with turmeric powder, garam masala powder, coriander powder, black pepper powder, red chili powder, and salt. Stir well and cook for 5-6 minutes, allowing the tomatoes to absorb the spices and soften.

  6. Enhancing the Flavor:
    At this stage, add an additional tablespoon of coconut oil. This helps to enrich the flavor and brings out the authenticity of the Kerala Egg Roast Masala.
