Instructions

  1. Prepare the Yam:

    • In a medium-sized pot, add 2-1/2 cups of water and a pinch of salt. Bring it to a boil.
    • Add the cubed Elephant foot yam into the boiling water and cook for about 7-8 minutes, or until it is half-cooked. Avoid cooking the yam pieces completely to retain a firm texture.
    • Drain the excess water and place the yam pieces on a paper towel to absorb moisture. Allow them to dry while you prepare the rest of the ingredients.
  2. Prepare the Spicy Mixture:

    • Heat 1 tablespoon of sunflower oil in a nonstick pan (Kadai) over medium heat.
    • Once the oil is hot, add 1 teaspoon of mustard seeds and let them splutter.
    • Add 6 curry leaves and let them fry for a few seconds, releasing their aroma.
    • Now, add 8 cloves of finely chopped garlic and 1 medium onion, finely chopped. Fry them until the onion turns soft and golden.
  3. Spice It Up:

    • Add 1/2 teaspoon of turmeric powder, 1-1/2 teaspoons of red chili powder, 1/2 teaspoon of fennel powder, and 1/2 teaspoon of black pepper powder to the onion and garlic mixture.
    • Stir well, making sure the spices are blended together. Be cautious not to burn the spices. Continue to cook for about 1-2 minutes, allowing the spices to release their fragrant oils.
  4. Combine the Yam and Spices:

    • Add the half-cooked yam pieces to the spice mixture in the Kadai. Stir gently to coat the yam pieces with the spices.
    • Cover the pan with a lid and let it cook on a low flame for 10-12 minutes. Stir occasionally to prevent sticking. If needed, add 2-3 tablespoons of hot water to help cook the yam without burning it.
  5. Finishing Touches:

    • Once the yam pieces are tender and the raw smell of the spices has dissipated, remove from the heat. Taste and adjust the seasoning if necessary.
    • Serve the Chena Mezhukuparrati as a flavorful side dish to white rice, or pair it with your favorite flatbreads like chapati or paratha.
