Spicy Klotok Recipe

Ingredients:

  • 2 ounces of klotok (boiled in hot water for about 1 minute to reduce any bitterness)
  • 4 cloves garlic, finely chopped
  • 5 shallots, finely chopped
  • 8 green chilies, sliced diagonally
  • 7 bird’s eye chilies (adjust to taste), chopped
  • 6 tablespoons sweet soy sauce (I use Bango brand)
  • Half a tomato, chopped
  • 3 bay leaves
  • A few slices of galangal (crushed)
  • Salt, to taste
  • Cooking oil, for sautéing

Instructions:

  1. Sauté Aromatics: Heat oil in a pan over medium heat. Add the chopped garlic and shallots, and sauté until fragrant and golden brown.

  2. Add Chilies and Bay Leaves: Incorporate the sliced green chilies, chopped bird’s eye chilies, and bay leaves into the pan. Continue to cook until the chilies soften and release their aroma.

  3. Combine Ingredients: Add the crushed galangal and chopped tomato to the pan, stirring well to blend the flavors.

  4. Add Klotok: Gently add the boiled klotok pieces to the pan. Stir to mix the klotok with the sautéed ingredients.

  5. Season and Simmer: Pour in the sweet soy sauce and add a pinch of salt, keeping in mind that klotok is already salted. Adjust the seasoning to taste.

  6. Cook Thoroughly: Allow the mixture to simmer until the klotok is well coated with the sauce and the flavors meld together.

  7. Serve: Once cooked to your liking, remove from heat and serve hot. Enjoy this spicy klotok dish as a delightful addition to your meal!
