Sundubu Jjigae (Korean Spicy Tofu Soup)

Sundubu Jjigae, also known as Sup Tahu Pedas Korea, is a delightful and spicy Korean dish that features soft tofu and a medley of flavors that create the ultimate comfort food. Perfect for any occasion, this dish is both warming and satisfying.

Ingredients

Eko noodles 4 pieces
Egg 1 large
Firm tofu 1 block
Napa cabbage Several leaves
Bon cabe (spicy chili paste) To taste
Sugar To taste
Salt To taste
Onion 1/2, chopped
Lime juice 2 tablespoons
Spice Blend
Shallots 4 cloves
Garlic 2 cloves
Tomato 1, chopped
Bird’s eye chilies 7, chopped

Instructions

  1. Prepare the Spice Blend: In a pan, heat a little oil over medium heat. Add the shallots, garlic, tomato, and bird’s eye chilies. Sauté until fragrant and the ingredients are softened.

  2. Cook the Base: Add the chopped onion to the pan and sauté until it becomes translucent.

  3. Add Noodles: Incorporate the pre-cooked eko noodles (boiled until just undercooked to prevent mushiness) into the pan. Pour in enough water to cover the noodles.

  4. Season the Soup: Add sugar, salt, bon cabe, and lime juice. Stir well to combine all the flavors.

  5. Add Tofu and Vegetables: Cut the firm tofu into cubes and chop the napa cabbage. Gently place them on top of the noodles in the pan.

  6. Add Egg: Create a small well in the center and crack the egg into it. Cover the pan and allow it to cook until the egg is set to your liking.

  7. Serve: Once the egg is cooked, give the soup a gentle stir, ensuring that the tofu and veggies are mixed in. Serve hot, garnished with extra chilies if desired.
