Lauki Aloo Sabzi Recipe

Lauki Aloo Sabzi is a flavorful and easy-to-make Indian dish featuring tender bottle gourd (lauki) and potatoes (aloo) cooked together in a blend of aromatic spices. This delicious vegetarian sabzi is perfect for a wholesome lunch and pairs wonderfully with roti or parathas. Bottle Gourd (Lauki) 1, peeled and chopped
Tomato 2, finely chopped

Green Chilli 2, chopped
Turmeric Powder 1 teaspoon
Coriander Powder 1 teaspoon
Black Pepper Powder 1/2 teaspoon
Salt To taste
Nigella Seeds (Kalonji) 1 teaspoon

Instructions:

  1. Heat the Oil:
    Begin by heating a little oil in a pressure cooker over medium heat.

  2. Add Nigella Seeds:
    Once the oil is hot, add the nigella seeds (kalonji) and let them cook for about 10 seconds until they begin to release their aroma.

  3. Cook the Onion and Ginger:
    Add the finely chopped onions and grated ginger to the cooker. SautΓ© until the onions become soft and slightly golden, releasing their sweetness.

  4. Add Remaining Ingredients:
    Now, add the chopped potatoes, bottle gourd, chopped tomatoes, green chilies, turmeric powder, coriander powder, black pepper powder, and salt. Stir everything well to ensure the spices coat the vegetables evenly.

  5. Add Water:
    Pour in 1-1/2 cups of water into the cooker and mix everything together. The water will help cook the vegetables and meld the flavors.

  6. Pressure Cook:
    Close the pressure cooker lid and cook the sabzi on high heat for 2 whistles. After that, reduce the flame and let it cook for another 3-4 minutes to ensure everything is tender and well-cooked.

  7. Release the Pressure:
    Turn off the heat and release the pressure from the cooker. Open the lid carefully, and give the sabzi a good stir to combine all the ingredients.

  8. Serve Hot:
    Serve the hot Lauki Aloo Sabzi with freshly made phulkas or parathas. For an added treat, pair it with a side of palak raita to enhance the flavors and make your meal more delicious.
