Ingredients:

  • 4 cups lentils
  • 7 cups water
  • 1 tablespoon olive oil
  • 2 onions
  • 5-6 cloves garlic
  • 2 teaspoons salt
  • 2 teaspoons cumin
  • 2 teaspoons fresh ground pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/2-1 teaspoon crushed red pepper flakes
  • 2 tablespoons red wine vinegar
  • 1 (14.5 oz) can diced tomatoes

  2. Simmer Lentils: Bring to a boil, then reduce heat and simmer, partially covered, for 30 minutes.
  3. Prepare Aromatics: Peel and chop the onions. Peel and mince the garlic, and place them in a small bowl along with all the spices.

  6. Cook Chili: Partially cover the Dutch oven and continue to cook for 45 minutes, stirring every 10 minutes until the chili thickens to your desired consistency.
  7. Final Touch: Add red wine vinegar and sprinkle with chopped cilantro if desired.
