Sop Ayam Garang Asam

Ingredients:

  • 1/2 chicken, cleaned and cut as desired
  • 3 lemongrass stalks
  • 3 cm ginger
  • 20 red bird’s eye chilies
  • 8 cloves garlic
  • 4 shallots
  • 2 green tomatoes
  • 2 limes (or more)
  • 4 kaffir lime leaves
  • Spring onions, to taste
  • Salt, to taste
  • Seasoning powder, to taste
  • Water, as needed

Steps:

  1. Clean and prepare the chicken, optionally marinate with lime juice and let it sit.
  2. Roughly chop the garlic and shallots. Bruise the lemongrass and ginger. Slice 6 red chilies; leave the rest whole. Cut the tomatoes and spring onions lengthwise.
  3. Heat a little oil in a pot. Add lemongrass, kaffir lime leaves, sliced chilies, and garlic. Sauté until fragrant.
  4. Pour in water and bring to a boil. Add the chicken and simmer until half-cooked.
  5. Season with salt, seasoning powder, and adjust sweetness with a little sugar if desired. Add lime juice and tomatoes. Stir well.
  6. Taste and adjust seasoning as needed. Simmer until chicken is fully cooked.
  7. Finally, add spring onions and cook briefly. Serve hot.
