Sop Ayam Garang Asam
Ingredients:
- 1/2 chicken, cleaned and cut as desired
- 3 lemongrass stalks
- 3 cm ginger
- 20 red bird’s eye chilies
- 8 cloves garlic
- 4 shallots
- 2 green tomatoes
- 2 limes (or more)
- 4 kaffir lime leaves
- Spring onions, to taste
- Salt, to taste
- Seasoning powder, to taste
- Water, as needed
Steps:
- Clean and prepare the chicken, optionally marinate with lime juice and let it sit.
- Roughly chop the garlic and shallots. Bruise the lemongrass and ginger. Slice 6 red chilies; leave the rest whole. Cut the tomatoes and spring onions lengthwise.
- Heat a little oil in a pot. Add lemongrass, kaffir lime leaves, sliced chilies, and garlic. Sauté until fragrant.
- Pour in water and bring to a boil. Add the chicken and simmer until half-cooked.
- Season with salt, seasoning powder, and adjust sweetness with a little sugar if desired. Add lime juice and tomatoes. Stir well.
- Taste and adjust seasoning as needed. Simmer until chicken is fully cooked.
- Finally, add spring onions and cook briefly. Serve hot.
