Category: Pasta Dishes
Servings: 4

Ingredients:

Ingredient Quantity
Linguine 320g
Chives 10g
Cherry Tomatoes 450g
Basil 10g
Sage 20g
Parsley 20g
Garlic Cloves 2
Fresh Chili Pepper 1
Extra Virgin Olive Oil 100g
Salt To taste

Instructions:

  1. Prepare the Tomatoes:

    • Begin by thoroughly washing the cherry tomatoes. Cut each tomato into quarters, then set them aside.
  2. Prepare the Herbs:

    • Rinse the chives, basil, sage, and parsley. Use a sharp knife or mezzaluna to finely chop the herbs into small pieces. Once chopped, place the herbs into a large mixing bowl, and then add the quartered tomatoes. Season with salt and mix them together, allowing the flavors to meld.
  3. Infuse the Olive Oil:

    • Slice the garlic cloves, peeling them as needed. Cut the chili pepper in half, removing the seeds. In a small saucepan, heat the olive oil over medium heat, adding the garlic and chili. Allow the oil to bubble gently, infusing with the flavors. Once the oil begins to bubble, turn off the heat, removing the garlic and chili pepper immediately.
  4. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Drain the pasta, reserving some of the cooking water.
  5. Combine and Serve:

    • Once the pasta is cooked, add it to the bowl with the chopped herbs and tomatoes. Pour the infused olive oil over the mixture, stirring gently to combine. If needed, add a small amount of the reserved pasta cooking water to help create a silky sauce.
  6. Finish the Dish:

    • Serve the linguine while still warm, garnished with a few extra fresh herbs if desired. Enjoy this simple yet flavorful dish with a kick of spice from the infused olive oil.

Cooking Tip: For extra flavor, consider adding a sprinkle of grated Parmesan cheese or a dash of lemon zest just before serving for added freshness and richness.

This Linguine with Fresh Herbs, Cherry Tomatoes, and Spicy Olive Oil makes a wonderfully light and vibrant pasta dish that is perfect for a weeknight dinner or a casual gathering. The aromatic blend of herbs combined with the slight heat from the chili creates a truly satisfying, memorable meal.
