Ikan Kembung in Oyster Sauce: A Delicious Indonesian Delight

Ingredients:

  • 3 mackerel fish, cleaned and cut into fillets
  • 1/2 packet fish frying seasoning
  • For the Stir-Fry:
    • 3 shallots, thinly sliced
    • 2 cloves garlic, thinly sliced
    • 1 tablespoon sweet soy sauce
    • 1/2 packet oyster sauce
    • 1/2 ripe tomato, chopped
    • 5 bird’s eye chilies (cabe rawit) and curly red chilies (cabe keriting), sliced
    • A pinch of salt and sugar
    • Cooking oil
    • Water

Instructions:

  1. Prepare the Fish:

    • Sprinkle the fish fillets with the fish frying seasoning and let them marinate for about 15-30 minutes. This step enhances the flavor of the fish.
    • Heat oil in a frying pan over medium heat. Fry the marinated fish until golden and cooked through. Remove from the pan and set aside.
  2. Cook the Stir-Fry:

    • In the same pan, add a little more oil if needed and heat it over medium heat. Sauté the sliced shallots and garlic until fragrant and golden.
    • Add the chopped tomato and sliced chilies to the pan. Stir-fry until the tomato softens and releases its juices.
  3. Add Sauces and Seasonings:

    • Stir in the oyster sauce and sweet soy sauce. Mix well to combine the flavors.
    • Add a pinch of salt and sugar to taste. Stir to blend the seasonings.
    • Pour in a small amount of water to create a sauce base and allow it to simmer until it starts to bubble and thicken slightly.
  4. Combine and Serve:

    • Gently add the fried fish fillets to the pan. Toss to coat the fish with the sauce, ensuring it’s well-covered.
    • Taste the sauce and adjust seasoning if necessary. Allow the fish to simmer for a couple of minutes, so it absorbs the flavors.
    • Once the sauce has thickened to your liking, remove from heat.
  5. Final Touch:
