07. Steamed Mackerel with Tauco Sauce

Ingredients:

Ingredient Quantity
Mackerel (medium-sized) 6 pieces
Green chilies 1 ounce (about 30g)
Shallots 4 cloves
Garlic 1 clove
Ginger (sliced) 4 slices
Tomatoes (sliced) 4 slices
Tauco (fermented soybean paste) 1/2 tsp
Red chilies (blended) 5 pieces
Salt to taste
Sugar to taste
Seasoning (optional) to taste

Instructions:

Step Description
1 Begin by frying the mackerel until golden brown. Set aside once done.
2 Slice the shallots, garlic, ginger, and green chilies thinly.
3 In the same pan, reduce the excess oil and sauté the sliced shallots, garlic, ginger, and green chilies. Add in the blended red chilies and tauco paste.
4 Allow the mixture to simmer gently, but be cautious not to overcook the green chilies.
5 Season the sauce with salt, sugar, and optional seasoning. Taste and adjust as needed.
6 Finally, add the fried mackerel back into the pan and gently stir until the fish is well coated with the sauce.
