Malvani Masala 2 teaspoons
Turmeric Powder (Haldi) 1/2 teaspoon
Cumin Seeds (Jeera) 1 teaspoon
Kokum (Malabar Tamarind) 1 piece
Curry Leaves 1 sprig
Oil 1 tablespoon
Salt To taste

Instructions

  1. Boil the Eggs:
    Begin by boiling the eggs in a saucepan for 10-12 minutes. Once done, drain the hot water, peel the eggs, and cut them in half. Set them aside for later.

  2. Caramelize the Onions:
    In a kadai or wide pan, heat a tablespoon of oil over medium heat. Add the thinly sliced onions and sautΓ© them until they turn golden brown and caramelized. This step will bring out the natural sweetness of the onions, which will balance the heat in the curry.

  3. Make the Onion Paste:
    Once the onions are caramelized, transfer them to a mixer grinder. Add the soaked cashew nuts and fresh grated coconut to the grinder as well. Blend the mixture to a smooth paste and set it aside.

  4. Prepare the Gravy Base:
    In the same pan, heat another tablespoon of oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Next, add the curry leaves and slit green chili, allowing them to splutter and release their aromas.

  5. Cook the Ginger Garlic Paste:
    Add the ginger garlic paste to the pan and sautΓ© for 2-3 minutes, or until the raw smell disappears and the paste turns golden.

  6. Combine the Ground Mix:
    Add the ground onion, cashew, and coconut paste to the pan. Cook this mixture for about a minute to allow the flavors to meld together.

  7. Add the Spices:
    Now, add the red chili powder, coriander powder, turmeric powder, and Malvani masala to the pan. Stir the mixture well and cook until the oil starts to separate from the gravy and the color deepens.

  8. Cook the Tomato Puree:
    Add the homemade tomato puree to the pan and cook the mixture for a few minutes until the gravy thickens and the tomato flavor cooks through.

  9. Simmer the Gravy:
    Pour in one cup of water, add the kokum, and season with salt. Allow the curry to simmer on low heat for about 10 minutes, allowing the flavors to develop.

  10. Add the Eggs:
    Gently add the slit boiled eggs into the gravy, ensuring they are coated with the flavorful masala. Taste and adjust the salt and spice levels if needed. Let the eggs simmer in the curry for another 5 minutes to absorb the flavors.
