Ingredients:
- 4 drumsticks, cut into 1-1/2-inch pieces
- 1 teaspoon jaggery, powdered
- 1 onion, finely chopped
- Salt to taste
- 4 dry red chilies (or to taste)
- 3 tablespoons coriander seeds
- 1/2 teaspoon fenugreek seeds
- 1 teaspoon black urad dal
- 3/4 teaspoon black peppercorns
- 1 teaspoon cumin seeds
- 1 tablespoon tamarind paste
- 4 garlic cloves
- 1/4 teaspoon turmeric powder
- 1 tablespoon grated coconut
- 2 teaspoons sesame oil
- 2 tablespoons oil (for tempering)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon black urad dal
- 1 sprig curry leaves
- Fresh coriander leaves, finely chopped (for garnish)

Instructions:

Begin by boiling 2 cups of water in a saucepan. Add the drumsticks and cook until they become tender. Set aside.

In a pan, heat 2 teaspoons of oil and add the dry red chilies, coriander seeds, fenugreek seeds, black urad dal, peppercorns, cumin seeds, tamarind paste, garlic, turmeric powder, and grated coconut. Cook for about 2β3 minutes. Turn off the heat and let the mixture cool down.

Once cooled, add a little water and grind the mixture into a smooth paste. Set the paste aside.

In another pan, heat 2 tablespoons of oil for tempering. Add mustard seeds, cumin seeds, curry leaves, and black urad dal. Let the mustard seeds splutter and the dal turn golden brown.

Add the chopped onion to the pan and cook until soft and translucent.

Now, add the boiled drumsticks, water, ground spice paste, salt, and powdered jaggery. Mix well and cook on low heat for 10 minutes.

Once cooked, turn off the heat and garnish with freshly chopped coriander leaves.
