Description: A recipe shared by a dear friend, perfect as a condiment for curries or paired with meatloaf, cold cuts, or sandwiches. Bursting with fruity, spicy flavors, this vegan-friendly chutney is a delightful addition to any meal.

Ingredients:

Quantity Ingredient
1 Mango
2 cups Sugar
625 ml Vinegar
1 tsp Ginger
4 cloves Garlic
2-4 tsp Chili Powder
4 tsp Mustard Seeds
8 tsp Salt
1 cup Raisins
1 cup Sultana

Instructions:

  1. Prepare Mangoes:

    • Peel the mangoes and cut them into small pieces. Set aside.
  2. Simmer Sugar and Vinegar:

    • In a pan, combine the sugar and all but 20ml of vinegar. Simmer for 10 minutes.
  3. Prepare Ginger-Garlic Paste:

    • In a food processor or blender, combine ginger, garlic, and the remaining vinegar. Blend to form a smooth paste.
  4. Cook Ginger-Garlic Paste:

    • Add the ginger-garlic paste to the pan. Cook for an additional 10 minutes, stirring occasionally.
  5. Add Mango and Spices:

    • Incorporate the mango pieces along with chili powder, mustard seeds, salt, raisins, and sultanas into the pan. Cook uncovered for 25 minutes, stirring occasionally until the chutney thickens.
  6. Monitor Closely:

    • Keep a close eye on the chutney as it thickens to prevent it from catching at the bottom of the pan.
  7. Jar and Seal:

    • Once the chutney reaches the desired consistency, carefully pour it into sterilized jars. Seal the jars with cellophane covers and label them.
  8. Storage:

    • This delectable mango chutney can be stored for several months. However, it’s so delicious that it rarely lasts that long in our house!
