Instructions:

Prepare Mangoes:
- Peel the mangoes and cut them into small pieces. Set aside.

Simmer Sugar and Vinegar:
- In a pan, combine the sugar and all but 20ml of vinegar. Simmer for 10 minutes.

Prepare Ginger-Garlic Paste:
- In a food processor or blender, combine ginger, garlic, and the remaining vinegar. Blend to form a smooth paste.

Cook Ginger-Garlic Paste:
- Add the ginger-garlic paste to the pan. Cook for an additional 10 minutes, stirring occasionally.

Add Mango and Spices:
- Incorporate the mango pieces along with chili powder, mustard seeds, salt, raisins, and sultanas into the pan. Cook uncovered for 25 minutes, stirring occasionally until the chutney thickens.

- Keep a close eye on the chutney as it thickens to prevent it from catching at the bottom of the pan.

- Once the chutney reaches the desired consistency, carefully pour it into sterilized jars. Seal the jars with cellophane covers and label them.
