Instructions

  1. Prepare the Rajma:
    Start by soaking the rajma (kidney beans) overnight in water. The next day, rinse the beans thoroughly. Pressure cook the soaked rajma in water with a pinch of salt for about 5-8 whistles until the beans are tender and soft. Once done, allow the pressure to release naturally and set the beans aside.

  2. Cook the Spiced Bean Filling:
    Heat a saucepan over medium heat and add a little oil. Once the oil is hot, add the finely chopped onions and garlic, sautéing them until the onions turn translucent. Add the cooked rajma and steamed sweet corn to the pan. Stir in the Veeba Marinara Sauce, red chili flakes, and salt to taste. Allow the mixture to cook until it thickens and the flavors meld together. Once thickened, remove from the heat and set aside.

  3. Prepare the Bread Cups:
    Preheat your oven to 200°C (392°F) and allow it to warm up for 10 minutes. Meanwhile, trim the edges of the whole wheat brown bread slices, then gently flatten each slice with a rolling pin. Grease a muffin pan and press the bread slices into the pan, shaping them into small cups. Optionally, spray a little oil on the bread slices or leave them as they are.

  4. Assemble the Bread Cups:
    Spoon the prepared spiced bean and corn mixture into each bread cup. For an extra kick, top each cup with a few slices of jalapenos (optional). Finish by sprinkling the grated cheddar cheese on top of the filling.

  5. Bake:
    Place the muffin pan in the preheated oven and bake for about 10 minutes or until the sides of the bread become crisp and the cheese melts, creating a golden brown crust.

  6. Serve:
