Ingredients:

  • 1 kg lele (catfish), approximately 10 pieces

Marinade:

  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 3 cloves garlic
  • 2 shallots
  • A thumb-sized piece of turmeric
  • A small piece of ginger
  • A small piece of kencur (aromatic ginger)
  • Water (enough to cover the fish)
  • 10 plastic bags (for freezing)

Instructions:

  1. Prepare the Lele:

    • Clean the lele thoroughly, removing the innards and making a few shallow cuts in the flesh. Rinse well and pat dry.
  2. Prepare the Marinade:

    • In a mortar and pestle or food processor, grind together the garlic, shallots, turmeric, ginger, and kencur until a smooth paste forms.
    • Add the salt and ground coriander to the paste, mixing well.
  3. Marinate the Fish:

    • Place the cleaned lele pieces in a large bowl.
    • Add the spice paste to the fish, ensuring each piece is well-coated.
    • Pour in enough water to cover the fish completely.
    • Cover the bowl and refrigerate for at least one day to allow the flavors to meld and the fish to fully absorb the spices.
  4. Freeze the Fish:

    • After marination, remove the fish from the refrigerator.
    • If you plan to cook the fish immediately, you can proceed to the next step. Otherwise, for freezing, wrap each piece individually in a plastic bag to ensure easy removal and prevent freezer burn.
  5. Cooking Instructions:

    • To cook, heat oil in a frying pan over medium heat.
    • Fry the marinated fish until golden brown and cooked through, about 5-7 minutes on each side.
    • Serve hot with your favorite side dishes.

Tip: For convenience, you can freeze the marinated fish in individual portions. This way, you can easily defrost and cook only what you need, making it a quick and hassle-free meal solution.
