Instructions

  1. Prepare the Dough
    In a deep pot, add 2 cups of water and bring it to a gentle boil over medium heat. Stir in the rice flour and mix it thoroughly to form a smooth dough. Turn off the heat once the dough starts to come together. Allow it to cool for a few minutes at room temperature.

  2. Add Fresh Ingredients
    Once the dough has cooled slightly, transfer it to a mixing bowl. Add the chopped spinach, spring onion greens (optional), coriander leaves, curry leaves, minced green chillies, and sesame seeds. Season with salt to taste. If needed, add a little water to help incorporate all the ingredients and knead the mixture into a soft dough.

  3. Rest the Dough
    Cover the dough and let it rest for about 10 minutes. This resting time helps in making the dough more pliable for shaping.

  4. Shape the Rotis
    After the dough has rested, divide it into 12 equal portions. Roll each portion into a ball and gently press it onto a greased pan or tava, flattening it to the thickness of a roti.

  5. Cook the Rotis
    Drizzle a few drops of oil around the edges of the dough circle. Fry the roti on medium heat for about 3–4 minutes on each side, or until golden brown spots appear and the roti is cooked through.

  6. Serve
    Once cooked, remove the roti from the pan and place it on a plate. Serve your Masala Akki Roti with Spinach hot, along with chutney or yogurt for a delicious, nutritious meal.
