- 2 tablespoons palm sugar (finely chopped)

- Granulated sugar (to taste)
- Sweet soy sauce (to taste)

- 3 shallots
- 2 cm turmeric
- 3 candlenuts
- 6 bird’s eye chilies
- 4 curly red chilies
- 1 cm kencur (aromatic root, optional)

Begin by boiling the beef ribs for about 5 minutes. Discard the foamy water, then add fresh water and continue boiling for approximately 15 minutes.
