Ingredients

  • 4 slices bacon
  • 4 eggs
  • 4 slices tomatoes
  • 1 whole green chilies, diced
  • 2 oz Monterey Jack cheese, shredded
  • 1/2 oz cheddar cheese, shredded
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Cook Bacon:

    • In a nonstick frying pan over medium-high heat, cook the bacon until crisp, turning once. This should take about 4-5 minutes. Transfer the cooked bacon to a paper towel-lined plate to drain excess fat. Discard the fat from the pan and wipe it clean.
  2. Prepare Eggs:

    • Place the pan back over medium heat. Crack the eggs into the pan and cook them to your desired doneness, flipping once if desired. Cooking time can vary from 2-5 minutes for soft yolks. Season with salt and pepper to taste.
  3. Prepare Bread:

    • While the eggs are cooking, place bread slices on a baking sheet (12×15 inches). Toast them under the broiler, about 6 inches from the heat source, until lightly golden, for 1-2 minutes. Flip the slices over.
  4. Assemble and Broil:

    • Top each bread slice evenly with tomato slices, diced green chilies, and a mixture of Monterey Jack and cheddar cheeses. Return the baking sheet to the broiler and cook until the cheese is melted and bubbly, approximately 2-3 minutes.
  5. Final Assembly:

    • To assemble each sandwich, place a cooked egg on top of each bread slice. Add a slice of crispy bacon on top of the egg. Sprinkle with freshly chopped cilantro for a burst of flavor.
